I placed the mirror up on manual mode and clicked the shutter release and it just self times a picture at 5 seconds. How do I change the time to 1 minute or 10 minutes? I cant find the answer anywhere on the manual.

You might have hit the mirror up button twice.

Just keep turning the thumb wheel until the shutter speed you want comes up.

Set ISO, Set Exposure to Manual, Mirror up or not doesn't make a difference in Long exposures north of 5'sec or more.
Change time via Tv mode (Shutter), make sure it is not on T or B but a specific time of ex, 32sec./60sec /etc..

Good luck
